8 fresh figs
8 fresh dates
200g goat cheese
4 handfuls rocket leaves
1/2 cup red wine vinegar
1. Tbs brown sugar 1 Cut the stems off and slice figs into circles. Remove stones from the dates and break the dates into pieces. Crumble the goat's cheese.
2. To make the dressing, pour the vinegar into a small saucepan and bring to boil. Keep boiling until the vinegar has reduced by half then add the sugar, stirring to dissolve, and let cool.
3. Arrange rocket leaves on serving plates with the figs, dates and cheese, then drizzle the dressing over.
