KEY POINTS:
A delicious compote of figs, cranberries, apricots, dates, pears and sultanas to add a touch of sweetness and warmth to those cold winter nights.
Serves 4
2 cups of assorted dried fruits such as figs, cranberries, apricots, dates, pears, sultanas
Zest of 1 orange
1 vanilla bean, split
1 Tbs brandy
1 1/2 Tbs manuka honey
1 1/2 cup apple juice
Vanilla icecream to serve
1. In a heavy based saucepan, add the fruit and orange zest.
2. Scrape the seeds from the vanilla bean and add, along with the bean to the saucepan.
3. Add the brandy, honey and apple juice. Simmer gently until the fruit becomes plump and juicy; approximately 20 minutes. Remove from the liquid and plate. The liquid can be reduced further if preferred or spooned over as is. Serve warm with vanilla icecream, or try fig and honey.
