8 slices of baguette
1 large clove of new season garlic, very thinly sliced
2 cups fresh broad beans
½ cup ricotta cheese
Juice of ½ a lemon
1 Tbs fresh mint finely chopped, plus leaves to garnish
Extra virgin olive oil to drizzle
Flaky sea salt and freshly ground black pepper
1 Toast the baguette slices on both sides either on the BBQ or in a pan, until golden.
2 Lay the garlic slices on the warm toast, on a serving platter.
3 Blanch the broad beans then cool and peel. In a bowl, add the beans, ricotta, lemon and mint then gently combine.
4 Spoon the mixture on the toast, drizzle with extra virgin olive oil then season with flaky sea salt and black pepper. Finish with a scattering of fresh mint leaves.
