Serves 4
Butter for greasing
2 eggs, separated
1/2 cup cream
1 1/2 cups milk
3 Tbs sugar
1 1/2 cups brioche crumbs
1 cup assorted frozen or fresh berries
1/4 cup caster sugar
1. Preheat oven 160C. Grease ovenproof baking dish. Beat egg yolks with cream, milk and the first measure of sugar.
2. Place crumbs in bottom of dish and pour over egg mixture. Bake for 20 minutes or until set. Remove from oven and increase temperature to 200C. Cover base with berries.
3. Beat egg whites until stiff then gradually beat in sugar, 1 tablespoon at a time until sugar has dissolved. Spoon meringue on to berries and return dish to oven. Bake for 10 minutes.
