Suitable for marinating 1 x 2kg whole fish or similar weight of chicken
1/2 cup avocado oil
1 Tbs horseradish sauce
3 cloves garlic
1 x 5cm piece of ginger
2 tsp salt
Juice and zest of two large lemons
4 fresh bay leaves
Salt and freshly ground black pepper
1 Pour the avocado oil into a bowl. Add the horseradish.
2 Peel and chop the garlic and the ginger. Either chop finely or combine to make a paste in a pestle and mortar with the salt. Add to the oil with the lemon juice and zest. Gently crush the bay leaves and add.
3 If using fish, score the flesh and rub in the marinade then leave for one hour before cooking. If using chicken, rub in well. Season and leave for one hour minimum or overnight before cooking.
