3 avocados
2 lemons
2-3 grapefruit, depending on size
250g chevre tihi (Kapiti goat cheese available at supermarkets)
1 cup freshly picked mint leaves, rinsed
Sea salt and black pepper
Extra virgin olive oil
1. Peel and slice avocado, squeeze the juice of two lemons over it and set aside.
2. Peel and segment the grapefruit and thinly slice the cheese.
3. Combine all ingredients, season and drizzle with a little extra virgin olive oil.
