An amazing dessert - or array of desserts - is the perfect finale to Christmas dinner.
Creating a spectacular dessert is one way to really elevate a meal on Christmas Day. It's an opportunity to add colourful berries and decadent toppings to make a sweet treat that everyone will be able to find room for, even if they're full of of turkey and ham.
First up we have a roulade made from rich chocolate encasing berries and cream and smothered with chocolate, more berries and nuts covered in toffee. This dessert is decadent and requires a bit of work, but it is well worth the effort for such an impressive and delicious result - an exceptional centrepiece for a well dressed table.
If you wish to serve an opulent dessert buffet, you could present an assortment of choices.
Small macaroons made from hazelnuts and coconut topped with vanilla cream and fresh cherries - which are at their peak right now - are given a bit of a zhuzh by being dipped into spiced syrup.
They look beautiful and will keep those who desire a smaller mouthful happy.
Pastry tartlets are baked then filled with delicious chestnut puree flavoured with bourbon vanilla. This is available from stores like Sabato in Mt Eden, but if you are unable to get to the store you may need to hop online to buy yourself a tin or two. Fold some through softly whipped cream, spoon into the cases then top the tartlets with blackberries or boysenberries. Christmas is the perfect time to enjoy berries but not only strawberries ... black, blue, raspberries and boysenberries are all in perfect shape for a limited time.

Chef's tip
Two of the recipes are quite involved, but the third is really simple. By all means make your own pastry cases if you have plenty of time. Also, make sure to take your time with the roulade. Ideally, make it a day in advance to keep stress levels low. It will keep well while wrapped, and you will be rest assured it will turn out perfectly on the day.
