Serves 4
2 cups plain flour
2 tsp baking powder
1/2 tsp salt
Warm water to mix
1 litre canola or rice bran oil
Fresh pineapple, diced
Golden syrup
Cream
1 Sift the flour, baking powder and salt together into a bowl. Add enough warm water to create a scone dough. Knead gently then leave for 30 minutes.
2 Pour the oil into a saucepan and heat until a shimmer appears on the surface. Alternatively, drop in a small cube of bread - if it turns brown straight away, the oil is hot enough.
3 Cut the dough into small squares, drop into the oil in batches then when golden, remove and drain on paper towels. Serve with the pineapple, plenty of golden syrup and cream.
