No apologies for the most simple of desserts; by using fresh fruit and high quality ingredients you will offer a totally refreshing end to the meal.
3 ripe persimmons
2 large ripe pears
4 tbsp vanilla syrup
1/2 litre berries vanilla ice cream
Extra vanilla syrup to drizzle
1 Peel and core the persimmons and pears. Slice thinly, put in a large bowl and toss the syrup through to coat all the fruit. When ready to serve, apportion the pears and persimmons in six glass dessert dishes.
2 Place a generous scoop of icecream on the fruit, and drizzle over a little extra vanilla syrup.
