Shahi's modern interpretation of methi malai matar pairs fenugreek leaves, peas and cottage cheese delicately cooked in spices with cream, finished with coriander.

Jeremy Shmid's team present a pretty mango panna cotta with gulab jamun (an Indian "doughnut" in sugar syrup) with mango puree and caramelised almonds: street food with a classy twist.

Paneer shimla mirch: paneer cooked with cumin seeds, ginger, garlic, onions, tomatoes, capsicum and spices. A mouthwatering dish, recommended to have with a lacha parantha, a delicious Indian bread.
