Serves 4
1 buffalo mozzarella
8 large field mushrooms
1 Tbs olive oil
Smoked kelp seasoning
Rocket leaves
Chervil
1 Preheat oven to 180C. Drain the mozzarella and leave to reach room temperature.
2 Lay the mushrooms in a shallow baking dish and drizzle with the olive oil. Sprinkle over the seasoning and bake for 20 minutes.
3 Slice or tear the mozzarella. Plate the hot mushrooms alternating with the mozzarella and top with some rocket leaves and chervil. Eat immediately while the mushrooms are hot enough to warm the mozzarella.
