The weather has been so glorious, there are even more reasons than usual to invite friends round to have a good old catch-up. Of course, good friends together means good food to graze on and nice drinks to imbibe while doing so.
Today we have the most succulent baby octopus - try your hardest to buy them fresh but frozen can work - just make sure they are thoroughly drained before cooking over a high heat. Grill them on the barbie or in a scorchingly hot pan so the wee tentacles get all crispy, then serve them sprinkled with flaky sea salt and a grind of black pepper, and a simple home-made mayo with a healthy dose of chilli to dunk them in. Chilli is being researched as an ingredient that may help to prevent prostate, lung and stomach cancer - so be generous! An icy cold beer also goes down a treat.
Next up, fresh broad beans are quickly blanched, cooled and peeled then combined with lemon, ricotta, extra virgin olive oil and mint. Piled on toasted baguette with a scattering of the thinnest slivers of new season garlic, this is a deliciously fresh taste well paired with a lively and green sauvignon blanc.
Empanadas are small pies from South America filled with chicken or beef but always including olives and raisins or currants in the mix, often boiled egg and plenty of garlic, coriander and chilli - so tasty warm from the oven and perfectly paired with a chilled dry Spanish sherry.
