KEY POINTS:
1 cup sugar syrup
3 cups fresh cherries
1 cup vodka
1 cup brandy
2 cloves
3 allspice
1 cinnamon stick
1 To make the syrup, bring 1 cup of caster sugar and 1 cup of water to a boil. Boil for 3 minutes then let cool.
2 Place the cherries, vodka, brandy, cloves, allspice, cinnamon and syrup into a glass or ceramic container. Put on a tightly fitting lid or cover with plastic wrap.
3 Let the cherries steep in a cool and dark place for at least two weeks or up to one month before either eating straight away or spooning into sterilised jars.
