Makes 9 ramekins
300g dark chocolate, chopped
1 cup extra virgin olive oil
8 eggs, separated
250g caster sugar, split into two amounts
2 tbsp triple sec
tsp salt
1 In a mixing bowl over simmering water, melt chocolate then slowly stir in oil. Set aside.
2 In another bowl, beat egg yolks with 125g sugar until fluffy.
3 Mix chocolate mixture into the egg mixture and stir in triple sec.
4 In a bowl, whip egg whites and salt until stiff and continue whipping, adding remaining sugar until incorporated.
5 Fold whites into chocolate mixture, pour into dishes and chill for four hours.
