Serves 4
16 asparagus spears, trimmed
4 chicken thighs, boneless
Salt and freshly ground black pepper
1 garlic clove, crushed
1 tsp brown sugar
2 tsp lemon juice
1 Tbs olive oil
1 Tbs fresh thyme
3 blood oranges
1 Preheat the grill. Brush the asparagus and chicken lightly with olive oil. Season well.
2 Grill the chicken for approximately five minutes on each side, depending on size - until golden and crispy. Grill the asparagus for two to three minutes, turning until cooked - again depending on size.
3 Whisk together the garlic, sugar, juice, oil and thyme. Taste for seasoning. Peel and segment the oranges. Plate the asparagus, chicken and oranges, drizzle with the dressing before serving.
