Makes eight ramekins
1 1/4 cups flour, sieved twice
60g ground walnuts
1/4 cup caster sugar
1/4 cup brown sugar
1/4 tsp ground cinnamon
1/8 tsp ground cardamom
1/2 cup butter, melted and cool
6 cups plums, stones removed and quartered
1/4 cup caster sugar
1. Preheat oven to 165C.
2. In a mixing bowl, stir in the flour, walnuts, the first amount of caster sugar, brown sugar and spices.
3. Slowly drizzle in the butter, and fold it into the mixture until crumbly. In another large bowl, combine the plums and the remaining sugar. Toss well.
4. In greased ramekins, spoon in the fruit, mounding it in the centre.
5. Sprinkle over the crumbs.
6. Bake the mixture crisp, and until the fruit is bubbling and the topping browned. This will take about 45 minutes.
