4 cups flour
3 tbsp baking powder
1 1/2 cup milk
1/2 cup yoghurt (I use Piako Natural)
150g butter
4tbsp caramelised onion
2tbsp roast red pepper or basil pesto (I use Essential Cuisine)
Optional: 200g diced bacon, gently sauteed
1 Heat the oven to 200C. In a large bowl add flour and baking powder, then grate in the butter. Rub mixture together with your hands until it resembles breadcrumbs. Add yoghurt and milk and gently mix until combined.
2 Roll out until about 30cm x 30cm, then spread the mixture with pesto, caramelised onion and scatter the bacon over if you're using it. Roll the dough gently then cut the roll into about nine pieces. Place on a tray and bake in oven for 12 minutes.
