Asparagus can also be barbecued. Prior to firing up your grill, cook some scrubbed new season potatoes (skin on) and cut into chunks. Also boil some eggs, peel them and cut into quarters. Mix some mayonnaise (store bought or home made) with a generous amount of grain mustard.
1 Cut the asparagus stalks to an even length. Brush will oil and season with salt and pepper.
2 Grill the asparagus on the barbecue while you're cooking your other meat. Turn the spears so they cook and char a little.
3 Remove the asparagus, chop into bite-sized pieces and toss through the cooked potatoes, eggs and mustard mayonnaise. Maybe add some chopped spring onions or finely diced red onion.
4 Serve with your barbecued meats, a green salad and some bread rolls, chutney, sauce and mustard. Damn tasty!
