Trout have a bad name as an eating fish, often nicknamed mud fish. However, a koura-fed trout caught from the waters of the many beautiful New Zealand lakes is hard to beat.
Ingredients
1 trout
Salt and pepper
1 onion (chopped)
Pinch of sage
Pinch of thyme
Small tin of pineapple pieces
Bacon
Directions
* Clean and scale the trout removing the head and tail.
* Sprinkle cavity with the sage, thyme, salt and pepper.
* Fill the cavity with pineapple pieces.
* Wrap the fish in bacon and form a parcel with greased tinfoil.
* Preheat the oven to 170C and bake for approximately one hour.
* Remove foil and serve.
