Roasted with Cranberries
Instead of plain roasted with potato wedges, try adding the sweetness of chopped oranges, orange juice and fresh whole cranberries (or craisins) with a dash of cinnamon, nutmeg and ginger. Roast them with granny smith apples sweetened with orange and lemon juice, or the tang of lime juice.
Stir-fried veges
Sliced thinly and stir fried 'til slightly crisp (natural with ginger or a sweet and sour sauce).
Yam curry
Soften onion and garlic clove in green curry paste, simmer 500g whole yams and a tin of coconut milk until yams are cooked. Vary with green banana, prawns or chunks of pumpkin.
