Winter salad
Add zing to winter salads with finely chopped mint instead of plain parsley. The fresh taste works with chicken, grape and avocado with a yoghurt dressing, and is unusual with smoked fish and the last of the feijoas. Hint at Turkey with cooked lentils, sliced apples and almonds or add to a mustardy potato salad.
Winter fruit
A mint syrup (simmered sugar and water, infused with leaves) is great with oranges/grapefruit for breakfast or a dessert compote.

Add to roast duck and lychee salad with a soy and orange juice viniagrette for a twist on Asian fare or chop through fried pork mince and ginger and wrap in lettuce leaves. A squeeze of lime adds bite.
