Luck of the Irish
Line your stomach before the big St Paddy's Day out with colcannon. Finely chopped cabbage stirred through mashed potatoes will warm every heart: be generous with the butter and add chopped spring onions if you want to get fancy. Granny may not approve.
Could be wurst
If German sauerkraut is too sharp for your tastes, make a modern take with a spicy cabbage coleslaw (try ginger juice in the mayo), stirred through with chunks of spicy fried sausage.
It's a wrap
Sharpen up plain old-style stuffed cabbage leaves by adding plenty of fried bacon, ham or lardons, a strong cheese, paprika, thyme or parsley, and serve in a rich tomato passata sauce.
