The Hero star became engaged to the Australian billionaire in January and the two will reportedly head down the aisle on the island of Barbuda in front of 50 friends and family members later thisyear.
According to TMZ, Packer is building a $US250 million (NZD$368.00 million) resort on the island with actor Robert De Niro, and the ceremony attendees will be flown to the location on private jets.
Carey has been tight-lipped about her wedding plans, but she did reveal the nuptials will be an intimate affair.
"(It's going to be) very private (and there won't be) tons of people," she told Access Hollywood last month.
"I'm most excited about the grandeur, darling. It's not gonna be a big wedding. But it's going to be grand.
"I think the most important thing is the relationship and, you know, just the connection. The love it of all. That's the most important thing, but of course I love a grand moment."
The singer is currently in the middle of the European leg of her Sweet Sweet Fantasy tour, which she's filming for an upcoming reality docu-series, titled Mariah's World, which will air on the E! Network.
The show will feature eight, one-hour episodes and focus on the singer as she embarks on her concert trek while planning her upcoming wedding to Packer.
