"I feel like all of our children were semi-surprises, in a good way, good surprise, positive surprises," she added.
The Baldwins, who wed in 2012, have already revealed they are adding another boy to the brood, but even that was unexpected due to the severity of Hilaria's nausea.
"I've been pretty nauseous," she explained, "so I was surprised it was a boy because I felt really nauseous with Carmen and less nauseous with him (Rafael)."
The thought of having two toddlers running around is already making the busy mum "slightly afraid", but Alec has assured her their third child will be their last.
"They come when they come, but this is it, we're going to have one more then we're going to enjoy them, all three of them," he said. "We have a lot of things we want to do to enjoy our life; we want to travel and we're both working a lot, but I like doing this, I like having kids. I just can't describe what it means to me."
Spanish-born yoga instructor Hilaria isn't due until September, but they already have a name in mind, even though it took a little negotiating.
"We think we know (the name), however, I'm not going to share it with you," she smiled. "(Alec) likes names like Joe and Tony, I like names like Sebastian and Orlando and Carmen and Rafa. I don't think I can have a Tony Baldwin."
Alec, 57, is also a father to 20-year-old daughter Ireland, from his first marriage to actress Kim Basinger.
