Ingredients
1 Tbsp | Vegetable oil |
1 cup | Swiss brown mushrooms, reduced salt |
1 cup | Green beans, finely sliced lengthways |
½ cup | Bok choy, chopped |
250 g | UNCLE BEN's® Rice Medley |
¼ cup | Finely chopped spring onion |
1 | Red chilli, small in size, thinly sliced |
Citrus miso dressing
1 Tbsp | Freshly grated ginger |
2 Tbsp | Soy sauce, reduced salt |
3 Tbsp | Orange juice |
1 Tbsp | Miso paste |
1 Tbsp | Sesame seeds |
1 pinch | Fine salt |
Directions
- Heat oil in a large non-stick frying pan or wok over a medium-high heat.
- Add mushrooms and sauté for 2 minutes.
- Add beans, bok choy and rice.
- Pour over citrus miso dressing and cook for a further 3-4 minutes, stirring frequently.
- Divide between 2 bowls, top with chilli and spring onion, and serve immediately.
Citrus miso dressing
Combine all ingredients in a small bowl or jar and whisk until miso is fully incorporated.
