Ingredients
2 | Kumara, Peeled and chopped |
3 ½ Tbsp | Avocado oil, or melted coconut oil |
1 ½ tsp | Salt |
1 tsp | Paprika |
1 pinch | Black pepper, and/or Cayenne Pepper |
2 cups | Cherry tomatoes, Whole or sliced |
2 bags | Taylor Farm Buffalo Ranch Chopped Kit |
1 | Avocado and Lime Slices, To serve, Optional |
Directions
Heat oven to 200C.
Place Kumara on a large baking sheet. Drizzle with oil and sprinkle with seasonings. Toss to coat evenly and spread into a single layer. Bake for 10–15 minutes. Remove pan from the oven and flip Kumara.
Add tomatoes and return the pan back to the oven to bake for 10 minutes, until kumara are soft, and tomatoes are lightly roasted.
Let cool slightly before adding salad. Open Taylor Farms Buffalo Ranch salad kit and remove dressing and topping packets.
Add salad to the pan of roasted kumara and tomatoes and toss everything together. Top salad with your favourite toppings, like sliced avocado and fresh lime wedges, for drizzling over salad.
Serve with the seasoned croutons, grated cheese, and buffalo ranch dressing from the kit.
