Ingredients
1 | Red capsicum, cut into thick strips |
3 slices | Zucchini, cut into thick strips |
4 | Large ripe tomatoes, halved |
2 Tbsp | Extra virgin olive oil |
200 g | Bocconcini |
1 handful | Basil leaves |
¾ cup | Paul Newman's Own Balsamic Dressing |
Directions
- Preheat oven to 200C.
- Combine the capsicum, tomato, zucchini, onion and a good splash of olive oil in a baking tray and cook for 35 minutes or until the vegetables are cooked through.
- Transfer to large bowl and while still hot, dress with Paul Newman's Own Balsamic Dressing. Add the basil and bocconcini and gently toss to combine.
