Ingredients
| 2 Tbsp | Olive oil |
| 1 small | Orange kumara, thinly sliced |
| 1 | Red pepper, sliced |
| 2 small | Capsicums, yellow or orange "sweetie" variety, sliced |
| 1 | Zucchini, sliced |
| 1 | Small red onion, sliced |
| 200 g | Food Snob Cypriot Halloumi (Main) |
| 1 bowl | Salad greens |
| 4 | Burger buns, toasted |
| 1 drizzle | Hummus, alternately use mayonnaise or sweet chilli sauce; enough for 4 burgers |
Directions
- Heat the oil in a frying pan and cook the vegetables in a batch until tender and just coloured.
- Wipe the pan clean and slice the halloumi thickly, pat each slice dry on paper towels.
- Spray or lightly brush the pan with oil and fry the slices until golden and softened.
- Layer each burger with hummus, greens, seared vegetables and halloumi then drizzle with sweet chilli sauce.
