Revive Cafe's Jeremy Dixon has broken in to the US market with his own TV series, Cook:30 — cooking delicious wholefood plant-based meals from scratch in 30 minutes. The accompanying cookbook Cook:30 is on sale here and those looking to put healthy meals on the table every day are snapping it up. This is one of the smaller, more basic recipes in the book. It makes a good accompaniment to many dishes and illustrates the very practical nature of the book.

Ingredients
1 ½ cups | Long grain brown rice (Main) |
3 cups | Water, boiling |
½ cup | Coriander leaves, finely chopped (Main) |
1 | Lime, zested (Main) |
¼ cup | Lime juice |
½ tsp | Salt |
2 tsp | Extra virgin olive oil |
Directions
- In a medium pot, combine the rice and boiling water and bring back to the boil.
- Put the lid on and turn down the heat and leave to simmer for around 25 minutes or until rice is soft and water has disappeared.
- Remove from heat, add the coriander, lime zest and juice, salt and oil.
