If you’re anything like me you’ll want to serve this with a wee dram of whiskey on the side.
Ingredients
2 Tbsp | Goji berries, or golden raisins |
3 Tbsp | Whiskey (Main) |
450 ml | Full fat milk |
6 Tbsp | Honey |
50 g | Rice flour |
4 Tbsp | Cold water |
15 g | Powdered gelatine |
150 ml | Cream (Main) |
3 Tbsp | Rolled oats (Main) |
1 handful | Walnuts |
Directions
- Combine goji berries and whiskey then set aside.
- In a saucepan combine milk, honey and rice flour. Cook over high heat for 4-6 minutes, whisking continuously, until mixture thickens and the rice flour is cooked. Set aside.
- In a small saucepan add water then sprinkle in gelatine. Set aside to soak for 5 minutes then cook over low heat until mix dissolves. Add to thickened milk along with the whiskey (retaining goji berries for next step). Allow to cool.
- Whisk cream to soft peaks then fold in oats and goji berries. Fold cream into milk mixture. Spoon into individual glasses and leave to set in the fridge, for at least 30 minutes, before serving. Grate a walnut over the top of each glass.
