This watermelon and pea salad makes for a great starter or to serve alongside meaty treats cooked on the barbecue. It’s all about fresh seasonal produce.
Ingredients
4 cups | Watermelon, cut into chunks (Main) |
1 cup | Fresh peas, from the pods |
1 | Lebanese cucumber, sliced |
½ | Red onions, thinly sliced |
100 g | Blue cheese, crumbled |
4 Tbsp | Pine nuts, toasted |
2 | Limes, to squeeze, or use lemons |
Directions
- On to a large platter place the watermelon. Sprinkle over the peas, cucumber, red onion, blue cheese and pine nuts.
- Squeeze over the lime generously and serve.
