This wasabi spiked avocado toast (including boiled egg for protein) makes a flavourful and healthy spring breakfast.
Ingredients
1 | Avocado, you may need 2, lightly smashed (Main) |
1 | Lemon, zest and juice, or use 1 lime |
1 small | Garlic clove, crushed with a little sea salt |
1 Tbsp | Wasabi paste, already prepared, or use fresh horseradish, more or less according to taste (Main) |
1 splash | Worcestershire sauce |
2 | Eggs, warm, boiled, chopped (Main) |
1 small handful | Chopped chives, and chopped dill |
2 slices | Bread, toasted, hot and buttered (Main) |
1 drizzle | Extra virgin olive oil, or walnut oil |
1 small handful | Nasturtium flower, optional, to garnish |
Directions
- In a bowl, lightly smash 1-2 avocados with the lemon or lime zest and juice, crushed garlic, prepared wasabi or fresh horseradish and a splash of Worcestershire sauce.
- Fold in warm, chopped boiled eggs and a handful of chopped chives and dill. Spoon onto hot buttered toast, drizzle with olive or walnut oil, top with fresh black pepper, a sprinkle of sea salt flakes and garnish with edible nasturtium.
