No added sugar and no added fat — just some salt for flavour, but you can leave that out too if you like.

Directions
- Roast the peanuts on an oven tray in a moderate oven until golden brown. Have a play with how well roasted you like your peanuts — I prefer the flavour when they are well-browned, but others like a lighter roast.
- Let the nuts cool, place in the Vitamix with the salt and blend, using the tamper to push the nuts down on to the blades.
- Blend less for crunchy, more for smooth.
- Scrape it into a jar to store.
Note: You can make peanut butter in other quality blenders, it just takes a lot longer to blend the peanuts — the Vitamix is unique in that the blades spin at 384km per hour. Be careful with other blenders because you could burn the motor out. It would pay to check the manufacturer’s instructions first.
