No added sugar and no added fat — just some salt for flavour, but you can leave that out too if you like.

Directions
- Roast the peanuts on an oven tray in a moderate oven until golden brown. Have a play with how well roasted you like your peanuts — I prefer the flavour when they are well-browned, but others like a lighter roast.
- Let the nuts cool, place in the Vitamix with the salt and blend, using the tamper to push the nuts down on to the blades.
- Blend less for crunchy, more for smooth.
- Scrape it into a jar to store.
Note: You can make peanut butter in other quality blenders, it just takes a lot longer to blend the peanuts — the Vitamix is unique
