Adjust amount of sugar syrup you use to suit your taste, the acidity of the lemons and the style of soda water. Use lime juice for a traditional Mojito. Keep extra sugar syrup in a jar with a tight-fitting lid. Store in the fridge.Makes four long drinks or one jug.
Make the sugar syrup, place the sugar and water in a small saucepan and place over low heat. Allow the sugar to dissolve then turn up the heat and boil for about one minute. Remove from the heat and transfer to a jug, cover and chill.
Place eight tablespoons of sugar syrup into a large jug. Rub the mint in your hands to release the natural oils and add to the jug. Add lemon juice. Add lots of ice cubes and top up with soda. Drop in the lemon slices and strawberries (hulled orunhulledand sliced if large). Serve in tall glasses or let your guests self-serve.
