The combination of coconut, vanilla, goji berry and lemon make these balls the perfect afternoon pick-me-up. You can double the batch and keep these treats in the freezer for a regular supply of energy bites. This recipe was supplied by Leonie Barlow from the Style Insider.
Ingredients
1 cup | Cashew nuts (Main) |
1 cup | Desiccated coconut |
1 | Lemon, juiced, plus rind |
1 Tbsp | Vanilla essence (Main) |
2 Tbsp | Goji berries (Main) |
⅓ cup | Water, or malt syrup |
1 pinch | Salt |
Directions
- In a food processor, blend cashews, coconut, half of the gojis and salt until a fine flour.
- While the blender is running add the lemon juice, rind, the water (or maple syrup) and vanilla essence until you get a dough-like consistency.
- Add the other half of gojis for crunch and blend for a further minute.
- Roll the mixture into 50 cent size balls. Store in fridge until firm, approx. 15 mins
