This is our new favourite slaw. The addition of snow pea shoots to the mix totally enhances the freshness of the whole thing. The real magic comes from the addition of the nuts and seeds, they not only offer crunch, flavour and colour but are good for you as well.
Salad
1 packet | Snowpea sprouts (Main) |
¼ | Red cabbages, finely sliced (Main) |
¼ | White cabbage, finely sliced (Main) |
1 | Finely chopped spring onion |
¼ cup | Coriander leaves |
¼ | Red onions, finely sliced |
1 | Nashi pear, finely sliced |
1 Tbsp | Hazelnut, roughly chopped (Main) |
1 Tbsp | Pine nuts (Main) |
2 Tbsp | Sunflower seeds |
1 Tbsp | White sesame seeds (Main) |
1 Tbsp | Black sesame seeds (Main) |
1 Tbsp | Linseed / flaxseed (Main) |
Dressing
½ cup | Mayonnaise |
1 Tbsp | White wine vinegar |
2 tsp | Lemon juice |
1 tsp | Dijon mustard |
½ tsp | Crushed garlic |
Directions
- Add all of the salad ingredients to a bowl.
- Whisk together the ingredients for the dressing and add to the slaw to serve.
