This rice makes a fragrant side dish and because it is flavoured with ginger, turmeric and oranges, it also contributes nutrients towards winter wellness.
Ingredients
1 | Small onion, finely chopped |
1 stalk | Celery, chopped |
1 knob | Ginger, thumb sized, grated (Main) |
1 knob | Turmeric, thumb sized, grated (Main) |
1 Tbsp | Cooking oil |
1 cup | Basmati rice (Main) |
400 ml | Coconut water, or use water (Main) |
2 | Oranges, juiced plus a little zest to serve (Main) |
⅓ cup | Desiccated coconut, or use toasted slivered almonds (Main) |
Directions
- Gently fry onion, celery, ginger and turmeric in oil until onion is soft. Add rice and stir to heat (3 minutes). Add coconut water or plain water and the orange juice. Stir, cover and boil, then turn heat to low and simmer gently until all the liquid is adsorbed. Turn off and rest for 5 minutes.
- Fluff rice with a fork, add desiccated coconut or slivered almonds, a little orange zest and sea salt to taste.
