Making your own healthy lunch is cheaper than buying one and it ensures you won't make bad food choices later in the day. Kumara is a go-to carb to keep our minds sharp. Roast the kumara the night before and leave them to be stuffed in the morning. It is easier to scoop out the inside while they are warm but if time is tight then the cooked kumara can be taken into the office, heated in the microwave and finished in 5 minutes, mixing the warm filling with the other ingredients.
Ingredients
4 small | Kumara (Main) |
1 Tbsp | Extra virgin olive oil |
1 cup | Canned tuna, any flavour you like (Main) |
½ cup | Chopped parsley |
1 cup | Cherry tomatoes, halved |
1 | Lemon, zested |
Directions
- Heat oven to 180C. Place kumara onto an oven tray, poke holes in them with a fork and cook for 45 minutes. Once they are cooked all the way through, remove and allow to cool for 5 minutes.
- Cut along the top of the kumara and carefully scoop out the flesh, ensuring you don't tear the skin as you do it.
- Place the flesh in a bowl and combine with all of the other ingredients. Mix and season with salt and pepper.
