For those days when comfort food is required but time is tight, this delicious dish can be made from scratch and on the table in less than half an hour. If you are using frozen prawns, place them in a bowl of cold water for 10 minutes, drain and pat dry with paper towels before cooking.
Ingredients
2 Tbsp | Olive oil |
½ | Onions, diced |
2 tsp | Fresh garlic, grated |
½ cup | White wine |
1 can | Chopped tomatoes, 400g (Main) |
12 large | Raw prawns, with tails attached (Main) |
½ cup | Feta, diced (Main) |
1 Tbsp | Red chilli, sliced |
1 Tbsp | Thyme leaves, picked (Main) |
Directions
- Heat oven to 220C. Heat oil in a large frying pan over medium heat, add onion and cook for 5 minutes. Stir garlic through then add wine and tomatoes, turn heat up and reduce for 3-4 minutes or until slightly thickened. Season generously to taste with salt and freshly ground pepper.
- Push prawns into the sauce, sprinkle over feta, chilli and thyme. Place in the oven and roast until prawns are cooked through (4-6 minutes).
- Finish with a generous drizzle of olive oil. Serve with hot crusty bread, boiled buttered potatoes or a simple green salad.
