Ingredients
2 Tbsp | Water |
600 g | Premium diced beef (Main) |
¾ tsp | Baking soda |
1 | Onion, diced |
4 cloves | Garlic, crushed |
1 tsp | Chilli powder |
1 tsp | Ground cumin |
1 tsp | Paprika |
1 tsp | Oregano |
1 tsp | Salt |
1 tsp | Brown sugar |
1 can | Tomato puree, (400g) |
1 | 400g can diced tomatoes |
1 can | Black beans, (400g), drained |
Directions
- Place the meat in a medium-large bowl. Combine the water and baking soda, then drizzle over the meat. Move it around gently to coat but do not over-mix or it will toughen. Stand for 15 minutes.
- Preheat the oven to 160°C.
- Meanwhile, sauté the onion in the oil until softened in a large heavy-based pan suitable for the hob and oven. Add the garlic.
- Add the meat and stir until browned. Add the spices, oregano, salt and brown sugar. Stir well. Add the tomato purée, diced tomatoes and black beans. Stir to combine. Cover and cook in the oven for 1 1/2 hours. Great served with rice.
