A baked savory choux pastry made of choux dough mixed with cheese. Makes approximately 30.
Ingredients
60 g | Butter |
¾ cup | Water |
½ tsp | Salt |
125 g | Plain flour |
3 | Eggs |
60 g | Cheese, (taleggio), cut into small pieces (Main) |
1 | Freshly ground black pepper, to season |
Directions
- Preheat oven to 200C. Combine the butter, water and salt in a saucepan. Bring to a boil then remove from the heat.
- Add the flour and stir then return to the heat and stir over a medium heat for 2-3 minutes or until the mixture begins to dry out and leave the sides of the saucepan.
- Now you can either transfer the mix to a food processor and beat in the eggs one at a time, or do by hand.
- Add the cheese and the pepper, then drop in teaspoonfuls (or use a piping bag) on to a lined baking tray and bake for 10 minutes. Turn the oven down to 180C and continue baking for 20-25 minutes or until puffy and golden.
