It's really moreish, the kids love it too. We alternately use Mainland Noble Cheddar or Gruyere for an authentic taste, but any cheddar can be substituted.
Ingredients
1 medium | Leek, saute'd in the butter |
1 cube | Butter, 50g |
1 tsp | Plain flour |
1 cup | Milk |
1 cup | Broccoli florets, chopped (Main) |
1 cup | Cauliflower, chopped (Main) |
1 cup | Kumara, peeled and chopped |
1 cup | Pumpkin, peeled and chopped |
1 cup | Wholegrain breadcrumbs |
1 cup | Gruyere cheese, or grated Noble Cheddar |
Directions
- Slice Leek and saute in butter to soften. Remove from heat and add tablespoon flour, mix to paste. Gradually add 1 Cup Milk, stirring. Add half a cup of the grated Cheese (Gruyere/Noble Cheddar) until melted and combined.
- Put all chopped vegetables in large baking dish and microwave covered for 2 minutes on High. Remove and pour cheese sauce over vegetables. Mix together fresh breadcrumbs and half a cup of grated Cheese. Sprinkle to cover vegetables. Bake for 20 minutes at 160*Celsius in preheated oven. Serve and Devour!
