My aunty Dianne loves to pickle, and chutney, and jam, and relish, and sauce, and even drizzle! Describing it as “the ultimate hobby,” her preserves are a reflection of the garden’s seasonal bounty. This sweet chilli sauce is great in stir-fries and with fish.
Ingredients
1 kg | Red capsicum, include fresh chillies with the capsicums according to taste, all seeded and chopped (a food processor makes this quick) (Main) |
4 cloves | Fresh garlic, chopped (use more or less to taste) and include a finely chopped knob of ginger if you wish |
3 ½ cups | White vinegar |
4 cups | Sugar |
1 cup | Jam-setting sugar |
1 tsp | Salt |
Directions
Place all ingredients in a large saucepan and cook until
thick. Pour into hot sterilised bottles.
