So many nutrient dense ingredients! Shrunk down into a palatable, hugely versatile salad. Loved my everyone I have served it to. Very alkalising for the body too.
Place chunks of roughly chopped vegies into the food processor. Whizz until like couscous or rice size pieces. Tip out into bowl. Stir through apple cider vinegar. Any vegetable combo works well for this salad - (anything nice raw) Leave out juicy vegetable's if transporting to work as it gets a little sloppy. Mill some linseed to stir into the mix. Add some chopped nuts and seeds!
Add chunks of steamed pumpkin or kumera to make a hearty salad. Add chopped tomato, cucumber, feta and olives for a Mediterranean style salad. Use as a base to serve hash cakes, fish, a curry...endless versatility. You can serve this so many ways and no one realizes how much nutrition they are getting in this super combo :)
