This is for my daughter who has to go without processed sugar for her health. Original recipe has sugar and flour which I adapted and added the almond meal instead of flour and the dates for the sugar factor. She doesn't need to miss out now and can enjoy a treat in her lunchbox. Very quick recipe with all the qualities of a sugary brownie. Yum with cream or yogurt.
Ingredients
1 ½ cups | Almond meal, Or mill almonds |
½ tsp | Baking soda |
½ cup | Cocoa powder, Or Cacao powder (Main) |
3 small | Eggs, Room Temperature |
2 Tbsp | Coconut oil |
1 ½ cups | Pitted prunes, pureed with the water |
½ cup | Water, (for prunes) |
2 tsp | Vanilla essence/extract |
Directions
- Heat oven to 160 degrees C. Whizz prunes and water to make a paste. Add wet ingredients. Miz dry ingredients together. Gently mix wet with dry ingredients. Pour in greased round cake tin.
