Roasting as a technique doesn't only apply to meat. The process of roasting is about caramelising natural sugars in an all-encompassing heat source. It is a classically Anglo cooking method and one we inherited as colonials - hence our familiarity with it.
Directions
- Skin and hollow out your medium sized onions with a melon baller or small knife.
- Stuff with a mixture that you have blitzed in your food processor - ginger nut biscuits, toasted cashews, bread crumbs and a bit of butter or oil.
- Sit the stuffed onions on a baking dish and after sprinkling with more breadcrumbs dot each onion with butter. Add a cup of water to the dish. Put into a moderate oven for at least 20 mins. Cook until tender and serve as a lunch with a salad or as an accompaniment to a roast chicken.
