Ingredients
½ cup | Water |
½ cup | Dry white wine |
1 clove | Garlic clove |
½ | Lemons |
20 | Mussels (Main) |
1 cup | Panko breadcrumbs |
50 g | Butter |
2 cloves | Minced garlic |
1 Tbsp | Flat leaf (Italian) parsley |
2 tsp | Lemon rind |
Directions
- Pre heat oven grill.
- Bring a large pot of white wine & water, clove of garlic, & wedge of lemon to the boil. Scrub the mussels and add to pot to open. Lift out as they open.
- Once mussels are cool enough to handle, take off one shell & gently lift the mussel out of the other half of shell. Remove tongue and centre sinew & any debris that may be in the shell. Replace the mussel back into the half shell. If the mussels look a bit dry sprinkle with a small teaspoon of the cooking liquor.
- Mix the Panko crumbs, softened butter, minced garlic, finely chopped parsley and finely grated lemon rind together and then put a spoon full on the top of each mussel shell.
- Place under the hot grill for a few minutes to warm up and brown nicely on top. Note: this doesn't take long to watch constantly.
