Ingredients
400 g | Salmon, (stirfry) (Main) |
1 tsp | Canola oil |
1 | Red onion, small, sliced |
1 tsp | Fresh ginger, grated |
4 cups | Mixed vegetables, eg sliced peppers, sliced asparagus, button mushrooms, peas (Main) |
3 Tbsp | Orange juice |
1 Tbsp | Hoisin sauce |
Directions
- Heat the oil in a large, non-stick frying pan on medium.
- Add the salmon. Stir-fry for 2 minutes, until the salmon is golden.
- Remove from the pan and set aside. Add the onion and ginger and cook for 1-2 minutes.
- Add the remaining vegetables and stir-fry for 2-3 minutes.
- Return the salmon to the pan with the orange juice and hoisin sauce. Heat through.
- Great served with lemon wedges and rice.
