Steak is one of my favourite meals and when I think of New York, I think of their famous steakhouses. So I wanted to come up with a recipe that incorporated steak and one of my other favourite foods, olives! This is really quick and simple to make and is packed full of flavour. I used Silver Ferns Porterhouse Steaks which has 2 steaks per packet.
Ingredients
1 packet | Porterhouse steak (Main) |
1 cup | Pitted green olives |
1 Tbsp | Capers |
1 clove | Garlic |
1 Tbsp | Lemon juice |
¼ cup | Extra virgin olive oil |
1 Tbsp | Fresh coriander |
Directions
- Combine the olives, capers and garlic in processor and chop finely then slowly add lemon juice and oil and process until blended. Transfer the tapenade to bowl and stir in the finely chopped coriander. Season to taste with pepper.
- Heat a fry pan to medium hot with some olive oil. Season the steaks with salt and pepper and cook them for a few minutes on each side for medium rare.
- Let the steaks rest for about 5-10 minutes and then spoon the tapenade over top.
