Directions
- Heat 4 cups chicken stock until simmering then add small meatballs made of chicken sausage squeezed from their casings.
- Add a large bunch of finely sliced and shredded spring greens (such as Asian greens, asparagus, cavolo nero, courgette, spring onion) and simmer to soften greens.
- Ladle into soup bowls, season with a squeeze of lemon and ground pepper and garnish with chervil or chives.
